Sake temperature guide: How quality dictates hot or cold

For example, daiginjo is the highest grade of sake where the rice has been polished down to a minimum of 50%. Representing the height of the brewmaster’s technique, daiginjo is best served chilled in order to highlight its delicate, fruity and smooth characteristics.

On the other hand, sake with greater umami and rich notes is better enjoyed heated, as it enhances the flavors and adds a velvety texture.
